What’s the maximum of websites I could create or own? Would I be paying each month for each site’s domain?
Hi I’m thinking about building a few websites, mostly simple websites with an article and maybe a file to download. I will also have affiliate links on these sites for some revenue. Since I have a lot of interests, is there a max to the number of websites I could create? And would I have to pay separate for each site if I have the same web host? What would be a good web host for this? thanks.

No limit but if you have lots I would bet you would lose inteterst after a while.
Google "Free web host" There are Hundreds to choose from. Pick a couple dozen.
Getting free websites is an option. However, if you want to be building websites to promote your affiliate links then its better that you pay for hosting your websites.

You could create unlimited websites. You would have to pay for each of your domains on a yearly basis. On the other hand , since you had mentioned simple sites, you could consider using subdomains pertaining to your site.
